A fruit bowl of ripening pears and some leftover dark chocolate lead to this DELICIOUS cake. Albeit pretty much all cakes are delicious but the combination of pear, dark chocolate and cinnamon turn a typical ‘boring’ naked cake into something spectacular. This cake was a crowd favourite, my colleagues are even requesting it become a regular fixture.

Luscious Lemon Lamingtons
I created this recipe for the Barkers Recipe Developer competition and it has landed me a spot in the top 4, Woohoo! It is a classic lamington with a twist and lathered in delicious Barker’s Lemon Curd (the best pre-made curd you can buy). Definitely give this a try, you will not be disappointed.

Who doesn’t like rocky road? Not only is it delicious but it is super easy to make. It is great for a last minute treat…. Yummo!

I make these bad boys every Christmas. They are absolutely delicious and very festive… they look just like SANTA HATS! These guys won’t last long and are bound to put you on Santa’s good list.
Lemon Sour Cream Cake
This cake is super simple and seriously delish! It can be made as one large cake or 4 small cakes. I have also made them into mini loaf tins and a bundt cake. This cake has been loved by all and will be a regular cake especially through summer.
Coffee & Walnut Cupcakes
These moody cupcakes are always popular and go great with your morning coffee. The crushed walnuts offer a great texture and the coffee cream cheese icing creates a smooth finish. If you love coffee you will LOVE these!
Avocado Chocolate Brownie
Now I love a good chocolate brownie and so I was quite eager to try this version using avocado. Too be honest I wasn’t expecting much but wow, if I hadn’t of known I would of thought it was a typical delicious unhealthy brownie but this baby is a great alternative. It ticks a number of health requirements including Gluten & Dairy Free, Paleo and even Vegan. I will be sure to be making this again.
No Bake Peanut Butter Cup Bars
I stumbled across this recipe when a colleague recommended Detoxinista as a cool health conscious website. As my love of peanut butter and chocolate is no secret I thought I would give it a try. So glad I did as oh my it is amazing! Definitely not something you can have all the time but in terms of a treat this is one of the healthier ones. It is also Gluten and can be Dairy Free.
Cacoa, Coconut Digestive Bites
I have been trying a few ‘healthier’ recipes over the past week and I have been presently surprised with the outcome. This coconut biscuit is adapted from Lorna Jane and is Gluten & Dairy Free.
Healthier Peanut Butter Cups
These homemade Reece’s peanut butter cups are an healthier alternative and so moorish. They have been made with natural peanut butter and 82% dark chocolate. Great after dinner treat.
Afghan Biscuits
Afghan’s are one of my Dad’s favourite biscuits so it is only fitting that I made these for Fathers Day. Unfortunately Dad is up in the North Island and unable to sample these specific ones but they are going down a treat in my house.
Winter Lamb Salad
This salad is perfect for a healthier winter option. It is packed full of great vegetables and delicious New Zealand lamb from our Westmeat butcher store. Beetroot and feta are great flavours that really compliment the lamb. Very easy and pretty quick to whip up so it is the perfect mid week meal. Enjoy!
Coffee, Hazelnut and Dark Chocolate Caramel Slice
Dish would have to be one of my favourite NZ food magazines. I snapped up this recipe from one of their recent posts and it is to die for. Created by Sarah Tuck of From My Kitchen this slice needs to be handy the next time you have friends over for coffee. Mum and Dad are visiting and they have given it the thumbs up… so moorish!

Peanut butter and chocolate is an ace combo. This recipe combines my favourite brownie recipe with addition of Whittakers Peanut Butter Chocolate. It is a great twist on a classic chocolate brownie.
Pear, White Chocolate & Caramel Cake
The trusty pear would have to be one of my favourite fruits. This cake is absolutely delicious and the caramel compliments the pear very well. This is a great cake and perfect with a good cuppa. Could also swap out pear or apple if you are that way inclined.
