This is a simple but key addition to the summer season. It is great for jazzing up meat, roasted vegetables, or drizzled over new potatoes. Traditionally salsa verde is made with parsley however I find it is even better with the addition of basil and mint.
Banana Pancakes
My sister Hannah introduced me to banana pancakes a few months ago, they are DELICIOUS and a healthier alternative to the standard pancake. Mine has been built on a recipe she uses from Once Upon A Chef. They are the perfect weekend breakfast, I have served with maple syrup, greek yoghurt, fresh strawberries, lemon zest, toasted almonds and a sprinkle of icing sugar. Enjoy!
Double Dark Chocolate & Pear Cake
A fruit bowl of ripening pears and some leftover dark chocolate lead to this DELICIOUS cake. Albeit pretty much all cakes are delicious but the combination of pear, dark chocolate and cinnamon turn a typical ‘boring’ naked cake into something spectacular. This cake was a crowd favourite, my colleagues are even requesting it become a regular fixture.
Braised Brisket
This braised brisket recipe is a wee gem. It is a rich, tender and perfect on a winter’s night served with your favourite mash and vege. Also this dish is great with crusty bread as you can soak up or the juices. It is great matched with your favourite red.
Corn Fritters
Sunday brunch would have to be one of my favourite things to do in the weekend (especially at Hello Sunday which has become ‘the’ Christchurch brunch spot) however sometimes the bank balance needs a break and so I have to resort to making my own. Corn fritters have become one of my go to’s and are even excellent the next day to get through the ever busy Monday. This recipe is super easy, it does unfortunately involve a food processor (darn those dishes) but I promise it is worth it to get a more even flavour!
Mushroom Risotto
This is the ultimate comfort food on a cold stormy night. A lot of people think risotto is hard to make but it is actually quite easy. The trick is to not rush it so make sure you have a bit of time.
Luscious Lemon Lamingtons
I created this recipe for the Barkers Recipe Developer competition and it has landed me a spot in the top 4, Woohoo! It is a classic lamington with a twist and lathered in delicious Barker’s Lemon Curd (the best pre-made curd you can buy). Definitely give this a try, you will not be disappointed.
Raw Beetroot & Carrot Salad
This raw salad is something special. Great for a casual summer barbeque or even on its own for a weekday lunch. It is very summery and full of flavour. Note pomegranate molasses should be available at your local specialty food store. Enjoy!

Guacamole is the perfect summer dip. It is so fresh and fragrant and great as either the hero or a part of a tasty meal. You will not be disappointed.
Parsley Mayo
This parsley mayo will take your salad to the next level. It is delicious and yet so simple to make. It has been a staple in my family for years with my Aunty Bron always making a killer version. If you don’t like parsley you can always swap out for your favourite herb (coriander, mint and basil will also work well).
Chelsea’s White Chocolate & Berry Cheesecake
This is one of Chelsea Winter’s most popular recipe and I definitely know why. I started making this cheesecake a couple of years ago and my gosh is it easy. No horse hooves (gelatine) needed in this one as the chocolate sets it instead. It is super easy to make and you will have it whipped up and ready to set in under 20 minutes. This is another great Christmas recipe that is sure to please the crowd.
Brownie Santa Hats
I make these bad boys every Christmas. They are absolutely delicious and very festive… they look just like SANTA HATS! These guys won’t last long and are bound to put you on Santa’s good list.
Lemon Sour Cream Cake
This cake is super simple and seriously delish! It can be made as one large cake or 4 small cakes. I have also made them into mini loaf tins and a bundt cake. This cake has been loved by all and will be a regular cake especially through summer.
Coffee & Walnut Cupcakes
These moody cupcakes are always popular and go great with your morning coffee. The crushed walnuts offer a great texture and the coffee cream cheese icing creates a smooth finish. If you love coffee you will LOVE these!
