A fruit bowl of ripening pears and some leftover dark chocolate lead to this DELICIOUS cake. Albeit pretty much all cakes are delicious but the combination of pear, dark chocolate and cinnamon turn a typical ‘boring’ naked cake into something spectacular. This cake was a crowd favourite, my colleagues are even requesting it become a regular fixture.
I created this recipe for the Barkers Recipe Developer competition and it has landed me a spot in the top 4, Woohoo! It is a classic lamington with a twist and lathered in delicious Barker’s Lemon Curd (the best pre-made curd you can buy). Definitely give this a try, you will not be disappointed.
This cake is super simple and seriously delish! It can be made as one large cake or 4 small cakes. I have also made them into mini loaf tins and a bundt cake. This cake has been loved by all and will be a regular cake especially through summer.
These moody cupcakes are always popular and go great with your morning coffee. The crushed walnuts offer a great texture and the coffee cream cheese icing creates a smooth finish. If you love coffee you will LOVE these!
The trusty pear would have to be one of my favourite fruits. This cake is absolutely delicious and the caramel compliments the pear very well. This is a great cake and perfect with a good cuppa. Could also swap out pear or apple if you are that way inclined.
I made this layered chocolate cake my friends birthday. I used my basic chocolate cake recipe that I have been making since I was kid then doubled it to make the layered cake pictured. I used 2 x 23cm tins and 2 x 28cm tins for the pictured cake. The usual cake recipe makes either 1 large 28cm cake or 2 x 23cm cakes.
Carrot cake is a favourite amongst friends and family and is always requested for birthday cakes. This cake is simple yet satisfying and best served with cream cheese icing. To make a double layer cake (pictured below) just times the recipe by 1.5 and use 2 x 23cm cake tins.
Red velvet is like a red chocolate sponge. It looks striking when you cut a slice with the different layers of white and red. There are lots of ways to decorate a red velvet cake depending on your theme.
These cakes are the ultimate treat this Easter. I have adapted my favourite banana cake recipe to make these easter nest cakes. I have added toasted coconut and mini pastel easter eggs to fit in with the theme.
I tried this delightful cake at Kim Evan’s Little & Friday Cafe in Newmarket, Auckland. Not long after my friend, Izaak and I brought the book and began experimenting with Kim’s treats. These lemon cakes would have to be my absolute favourite and very popular amongst friends, family and colleagues. This recipe makes 12 mini cakes or 1 double layer cake. I have made these recipe many times in a range of sizes including mini cakes, a large cake and doubling this recipe to make a six layer cake (pictured below).
