Lemon Posset

This dessert is the ultimate entertainer as all prep can be done ahead of time so there is no stress. Great in summer when fresh berries are available. You can serve this dessert out of glasses, ramekins or even teacups. Just whatever suits your theme.

Lemon Posset

Ingredients:

  • 600ml cream
  • 2/3 cup sugar
  • 100ml strained lemon juice
  • Berries to serve
  • Whipped cream to serve

Method:

Heat cream and sugar together in a heavy-based saucepan over a low heat. Simmer for about 3 minutes. Stir in lemon juice. Cool slightly and pour into your serving dishes, in this case glasses. Top with fresh berries and whipped cream.

You can make this dessert the same day or the day before. Keep the glasses covered and chilled until serving.

Serves 4-6 depending on glass size.
