Banana Chocolate Muffins

Have leftover old banana’s? Don’t throw them out, mash them up and make tasty banana chocolate muffins. They are great for taking to work. You can easily double the recipe and freeze the leftovers to pull out each day for work.

Banana Chocolate Muffins

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 cup Whittakers Dark Chocolate, roughly chopped
  • 1 egg, lightly whisked
  • 1 tsp vanilla extract
  • 100g butter, melted
  • 1 tsp baking soda
  • 1 cup milk
  • 1 cup (2 large bananas) mashed banana

Method

Preheat oven to 200° C. Prepare muffin pans by greasing and placing squares of baking paper in them.

Combine flour, sugar and chocolate chunks in a bowl. Make a well in the centre and pour in combined egg, vanilla, butter, and baking soda dissolved in milk. Add banana and gently mix until ingredients are just incorporated (do not over mix).

Place spoonfuls into muffin pans and bake for 12-15 minutes until springy on the surface.

Eat straight out of the oven or you can freeze in an airtight container and pull out as you need them.
